Herb Omelette 

Omelettes are very versatile, you can serve them as a plain omelette or as a herb omelette or with cheese or as a light summer lunch filled with seasonal fruit.

Makes: 1 omelette
Ingredients
  • 2 eggs

  • 15 ml milk

  • 15 ml butter

  • salt and pepper to taste

  • fresh herbs of your choice

Method
  1. Beat eggs with milk — add salt and pepper

  2. Heat butter in a small frying pan — pour in beaten egg, add herbs, and cook until set

  3. Loosen omelette from sides and bottom with a spatula and serve, open or folded.

Variations
  1. Cheese omelette: Add 125 ml grated Chedder cheese.

  2. Fruit omelette: Serve omelette with a filling of freshly chopped apple, strawberries, cherries or pineapple — dust with icing sugar before serving.
