Lamb Shanks in Cranberry Sauce

Lamb shanks in cranberry sauce 

Lamb shanks in cranberry sauce—the cranberry sauce adds a subtle sweetness which really complements the rich flavour of the lamb shanks. Serve with mashed potato and steamed green beans.

  • 15 ml olive oil

  • 6 lamb shanks

  • 20 g butter

  • 30 ml plain flour

  • 375 ml chicken stock

  • 250 ml red wine

  • 275 g jar whole berry cranberry sauce

  • fresh rosemary sprigs

  1. Preheat oven to 170°C

  2. Heat oil in a large, heavy-based, flameproof dish over high heat

  3. Cook shanks, in two batches, for 4 to 5 minutes on each side or until brown on all sides, remove to a plate

  4. Melt butter in dish until sizzling

  5. Add flour and cook for 1 minute

  6. Remove from heat and slowly add stock, wine and cranberry sauce

  7. Season with salt and pepper, return to heat and bring to the boil

  8. Add lamb and rosemary

  9. Cover dish, transfer to oven and bake for 2½ hours

  10. Remove lid and bake for a further 30 minutes or until shanks are tender
