Blueberry Pecan Loaf 

Quick and easy to make, this blueberry pecan loaf is delicious and ideal for a tea time treat.

Makes: 1 loaf
Ingredients
  • 250 g plain flour

  • 10 ml baking powder

  • 2 ml salt

  • 1 ml bicarbonate of soda

  • 1 ml ground nutmeg

  • 125 g sugar

  • 60 g pecan nuts, chopped

  • 2 eggs

  • 60 ml milk

  • 125 ml orange juice

  • 10 ml grated orange zest

  • 90 g butter, melted

  • 155 g blueberries

Method
  1. Preheat oven to 180°C

  2. In a large bowl combine flour, baking powder, salt, bicarbonate of soda, nutmeg and sugar

  3. Mix in pecan nuts

  4. Make a well in the centre.

  5. In a medium bowl, beat eggs with milk, orange juice and zest

  6. Fold in melted butter

  7. Add egg mixture to flour mixture, mixing until just combined

  8. Gently fold in blueberries

  9. Pour batter into a well greased 20 x 10 cm loaf tin — bake for 55 to 65 minutes until loaf is golden and risen

  10. Cool in tin for 10 minutes — turn onto a wire rack to cool.
