A blender or liquidiser is a device used almost entirely for the purpose of turning foodstuffs to liquid or purée. They can be used to chop, blend, purée, whip, froth, emulsify, liquefy and process all types of ingredients including ice. Some blenders are supplied with a mill to grind coffee beans, herbs and spices.
Most fruits and vegetables can be blended in a liquidiser, however some of the harder fruits, such as apples, may need to be cut up into smaller pieces before they will blend easily. It is also recommended that any dried fruits are soaked in water for a few hours before blending. When crushing ice add 15 ml water to 6 ice cubes and operate the blender in short bursts.
Immersion Blender
An immersion blender, a tall and narrow handheld blender with a blade at one end, can be used to blend ingredients or purée food in the container in which they are being prepared. They are sometimes called stick blenders, wand blenders or hand blenders. Many immersion blenders come with attachments like whisks, for whipping cream and egg whites, and chopping blades, for chopping small quantities of food ingredients quickly.
Tips and Hints
The fastest and easiest way to clean a blender is to fill the container one-third full of hot water and to add a couple of drops of dishwashing liquid. Replace the top, turn the blender on high, and run for several seconds. Rinse the container and top under warm water.
