The perfect roasted asparagus is slightly browned on the outside, with a vibrant green colour, and has just the slightest bit of bite when eaten. This roasted asparagus recipe, with olive oil, salt, and lemon zest, is lively and full of complex flavour notes.

Ingredients
Method
  1. Preheat the oven to 200°C

  2. Wash and break the ends off the asparagus — if your spears are large, you should also peel them

  3. Arrange with plenty of space on a baking sheet

  4. Drizzle with olive oil, then sprinkle with zest and salt

  5. Give the baking sheet a few shakes, and place into oven

  6. Cook for approximately 20 minutes giving the baking sheet a good shake halfway though

  7. Asparagus are done when the edges are lightly browned, and the spears are a vivid green

  8. Taste one to make sure it is cooked through – due to fluctuations in asparagus size, cooking times will vary

  9. Drizzle lemon juice over spears and serve immediately.
