Mealiepap Tart 

Mealiepap, made out of mealiemeal, is a traditional staple food of South Africans. This mealiepap tart is generally only made for special occasions.

  1. Heat the oil in a pot or saucepan and fry the chopped bacon over a medium heat, Remove from the pan

  2. Add the onions and garlic and fry until golden

  3. Add the mushrooms and cook for a minute

  4. Return the bacon and increase the heat

  5. Add the wine and dried herbs (if you are using fresh herbs, only add them once the sauce is cooked)

  6. Bring to a boil and simmer for about 5 minutes

  7. Add the tomatoes and cook over high heat until the sauce thickens

  8. Keep stirring to prevent it from burning

  9. Remove from the heat and set aside

For the Pap

  1. Pour 1.75 litres of water into another pot and stir in the mealiemeal and 15 ml salt

  2. Cook over a low heat for 8-10 minutes, then add the sweet corn and remove from the heat

Finish the Dish

  1. Oil an ovenproof dish. Spoon a 3 cm layer of pap onto the base and cover with a layer of sauce, continue in this way ending with a layer of sauce

  2. Cover with cheese and top with twists of streaky bacon in a criss-cross pattern

  3. Bake in a preheated oven at 180°C for between 40 minutes and an hour.
