Pumpkin Flowers with Fish
Posted in Vegetable Recipes Tell-a-FriendPumpkin flowers are delicious fried in a little butter or cooking oil, or dipped into batter and then fried. They can also be added to fish and meat dishes.
Ingredients
20 large pumpkin flowers
1 fresh fish
1 medium onion
1 large tomato
15 ml cooking oil
125 ml stock OR water
salt and pepper to taste
Method
Clean the fish, remove all the bones and skin — cut the fish into small pieces
Peel and chop the onion
Wash and finely slice the tomato
Remove the centres and stem from the pumpkin flowers — wash the remaining flower petals well
Heat cooking oil in a frying pan
Add the onion and cook until golden brown
Add the tomato — when cooked add fish and cook for about 10 minutes
Add the water or stock — when mixture begins to boil, add the pumpkin flowers and season with salt and pepper
Serve hot.
