Pumpkin Flowers with Fish

Pumpkin Flowers 

Pumpkin flowers are delicious fried in a little butter or cooking oil, or dipped into batter and then fried. They can also be added to fish and meat dishes.

Ingredients
  • 20 large pumpkin flowers

  • 1 fresh fish

  • 1 medium onion

  • 1 large tomato

  • 15 ml cooking oil

  • 125 ml stock OR water

  • salt and pepper to taste

Method
  1. Clean the fish, remove all the bones and skin — cut the fish into small pieces

  2. Peel and chop the onion

  3. Wash and finely slice the tomato

  4. Remove the centres and stem from the pumpkin flowers — wash the remaining flower petals well

  5. Heat cooking oil in a frying pan

  6. Add the onion and cook until golden brown

  7. Add the tomato — when cooked add fish and cook for about 10 minutes

  8. Add the water or stock — when mixture begins to boil, add the pumpkin flowers and season with salt and pepper

  9. Serve hot.
